Tomatoes and Roasted Zucchini 
Ingredients
- olive oil for greasing the skillet
- 1 onion chopped
- 1 clove garlic, minced
- 1 can of tomatoes
- 2 zucchinis, chopped
- 1 big yellow pepper, chopped
- 2 tsp snipped fresh/dry basil
- black pepper , sa;t
Instructions
Grease skillet with oil. Preheat over medium heat. Saute onions and garlic. Stir in the other ingredients. Cook, covered about 5 minutes. Uncover and cook about 5 more minutes until most of the liquid evaporates and the zucchini is tender. Place in serving dish
